The Federal Institute of Education, Science and Technology of Rio de Janeiro (IFRJ), located at its Rio de Janeiro Campus, has announced the availability of 15 spots for the free specialization in Food Safety Management and Nutritional Quality, with the first class starting in 2027.

Course Information

Classes will take place in person on Mondays, Wednesdays, and Fridays, from 6 PM to 10 PM, at Rua Senador Furtado, No. 121/125, in Maracanã, Rio de Janeiro. The course is scheduled to last 18 months, totaling 360 hours of course load, organized into various core subjects.

The structure of the specialization comprises several areas, as listed below:

  • Food Microbiology: 45h
  • Fundamentals of Food Preservation: 15h
  • Fundamentals of Toxicology: 30h
  • Fundamentals of Metrology for Food Quality: 15h
  • Nutritional Quality:
    • Nutrition, Technology, and Health: 30h
    • Diseases of Nutritional Origin and Functional Components: 30h
  • Food Safety Management:
    • Allergen Management in the Food Industry: 15h
    • Quality Management in the Food Industry: 15h
    • Prerequisite Programs in the Food Industry: 30h
    • Hazard Analysis and Critical Control Points (HACCP): 30h
    • Quality and Food Safety Management Standards: 15h
    • System Auditing and Certification: 15h
    • Risk Analysis: 15h
  • Project Development:
    • Seminars: 15h
    • Scientific Writing: 15h
    • Project Development: 30h
  • Final Course Project: workload to be defined.

Target Audience

The specialization is aimed at graduates in the following areas: Nutrition, Chemistry, Chemical Engineering, Pharmacy, Veterinary Medicine, Microbiology, Agronomy, Animal Science, Food Engineering, and Biology, provided they are familiar with the course announcement.
